I am a mother of five, a nurse, a wife, a daughter, and up until 2012, I was an avid meat eater. While my husband had stopped eating beef when he was 23 years old, long before he met me, I continued to enjoy my steak up until we had the conversation that would propel us into the best change we ever made. We decided to go Vegetarian. I'm an all or none kind of girl, so I was ready to clean out the pantry and refrigerator the next day, but my husband needed time to acclimate to the idea of giving up meat. So, our journey began.
We started slowly, starting with eating a salad with every meal, and eventually we graduated cutting out all meat except salmon. Our last salmon dinner was on the last day of December 2011 and our vegetarian life change began January 2012.
Believe it or not, giving up meat was easy. We ate a lot of salad but we also ate pasta and bread which kept us overweight. So we began researching, but it wasn't until I watched "Fat, Sick and Nearly Dead", that I decided to follow through on an idea I had been mulling over for weeks. We were going to juice for 60 days. Now, I just had to get my husband on board.
So, I bugged him. Everyday I would ask if he had watched the documentary yet. Finally, he cracked. After one watch he was on board, as long as he had a 30 day grace period. We had a deal. As Corey wrapped his mind around the adventure we were about to embark on, I continued doing research. I knew the key to this juicing thing was going to be variety. I began downloading all kinds of juice recipe books and easy vegan recipe books because I had already decided, for the both of us, that we were going to be vegan at the end of these 60 days.

Our 60 day juice fast began on June 1, 2013. It was awesome, scary and one of the hardest most rewarding things I think we have ever done.... and we did it together.
Our juice experience has been a lot of trial and error with a lot of determination to want better for ourselves and for our children. This has been the easiest, hard transition that we have ever made because it is a life change. It is like being an infant and learning my way around the kitchen again. I choose to see it as an adventure. I actually get excited when I prepare a delicious healthy meal and don't have to turn on the stove and it takes less than 30 minutes. I am a true believer that God has provided us everything we need in its natural form. Our desire to consume processed food/junk food is gone.

My husband was another story altogether. He had been diagnosed with arthritis in both knees in at 38, after having a knee arthroscopy and having over 200 ml of fluid drawn from his swollen knees. The pain was so bad it brought him to tears, and stopped him from pursuing activities he loved like biking and running. He suffered from gastric reflux, sleep apnea accompanied by thunderous snoring, and terrible frequent headaches. To top it all off, he was hypertensive and had high cholesterol.
Thanks to the lifestyle change we made, he is off his blood pressure medication and his cholesterol levels are normal. He no longer snores nor has any apnea while sleeping. His headaches are gone, and he no longer has knee pain and swelling.
